Cacao Mousse-filled Strawberries

I absolutely LOVE strawberries and chocolate. So here’s a great recipe that gives you both of those tasty things that you can feel great about eating! All the clean ingredients that will curb that sweet tooth and keep you feeling satisfied.

Cacao mousse-filled strawberries


1 can of full fat coconut milk

1/4 cup cacao

1/4 teaspoon of monk fruit

Strawberries

Pinch of Himalayan pink salt




Before you begin this recipe, you will need to place your can of full fat coconut milk in the fridge overnight or in the freezer for 20 minutes. This allows the coconut milk to separate into half a watery mixture and half a white solid. I place the liquid in a jar and use later for smoothies. The solid part is what you will use for this recipe. Once your coconut milk is frozen or in the fridge overnight, open it and separate the liquid from the solid.

Combine all of your ingredients in a mixer. I have also used my magic bullet or blender for this process, it will just be a bit creamier than thick. Place the mixed ingredients in the fridge for 20-30 minutes.


As your mousse is chilling, take your strawberries and cut off the tops. Then cut into the center to create a space to fill with the mousse.


Scoop the chilled mousse into an icing bag, or use a plastic bag and snip one of the corners to create your own piping bag. Fill the strawberries with this yummy goodness and keep in the fridge until you are ready to eat them. I usually have some left over mousse that i will keep in a jar and eat later.
